It’s back to school time! Every Fall we start the school year off with motivation and inspiration. We vow to send our kids to school with fun, nutritious lunches. That usually lasts about a month, then reality sets in. Around mid-September we stock up on Lunchables and Uncrustables and call it good.
This website lists “15 Exciting and Wholesome School Lunches.” These are ridiculous suggestions. Let’s start with the Gnocchi with Brussels Sprouts, Chicken Sausage, and Kale Pesto. If your kid can’t pronounce it, they probably won’t eat it. Next up is the Cherry Tomato Couscous Salad with avocado and chickpeas. Seriously? Buffalo Chicken Stuffed Avocado Bowls look and sound good….for a ladies luncheon! How early are you getting up in the morning to stuff Avocado skins with chicken salad topped with blue cheese and scallions?
If you’ve got this kind of time on your hands and your kids will eat this fancy, schmancy stuff, good for you. I’m sticking with pre-made sandwiches from the Smith’s deli and rice krispy treats. Not the homemade ones though.
